  20. Prepare 3 inch ginger
  21. Take 2 tbsp roasted gram dal / putani
  22. Take 3 green chilli
  23. Take 1/2 tsp sugar
  24. Take 1 pinch Asafoetida
  25. Take 1/2 cup water
  26. Prepare 1 tbsp lemon juice
  27. Prepare 1/2 cup seedless tamarind / imli
  28. Make ready 1/2 cup seedless dates / khajoor
  29. Prepare 2 cups water for thinner consistency
  30. Take 3 cup water
  31. Make ready 1/2 cup jaggery /gud
  32. Make ready 1/2 tsp fennel powder / saunf powder
  33. Take 1 tsp coriander powder / dhaniya powder
  34. Prepare 1/2 tsp dry ginger powder / sonth- saunth powder
  35. Make ready to taste salt
Instructions to make Aloo Basket chaat:
  1. Firstly, peel and grate 3 potato. use fresh potatoes, else aloo basket will not be crispy.
  2. Now rinse the grated raw potato well to remove of starch.
  3. Drain off the potato and squeeze out water completely.Further add ½ cup corn flour and ½ tsp salt.
  4. Squeeze the potato and prepare a moist potato mixture.
  5. Now spread the potato mixture over sieve.deep fry in hot oil until it turns golden brown.
  6. Finally, prepare the potato basket chaat using prepared aloo basket.
  7. Firstly, in a blender take 1 cup coriander leaves and ½ cup mint leaves.
  8. Also add 3 clove garlic, 3 inch ginger and 3 green chilli.
  9. Additionally add 2 tbsp roasted gram dal, ½ tsp cumin powder, 1 tsp chaat masala, ½ tsp sugar, ½ tsp salt and pinch of hing.
  10. Blend smooth adding ½ cup water. - transfer to a cup and mix 1 tbsp lemon juice.
  11. Finally, green chutney for chaat is ready to use for sandwich or chaats.
  12. Firstly, in a large kadai take equal proportion of tamarind, dates and jaggery (½ cup each)
  13. Further pour 2 cups of water. - mix and boil the mixture for atelast 10 minutes.
  14. Also add ½ tsp fennel powder, 1 tsp coriander powder, ½ tsp cumin powder, 1 tsp kashmiri red chilli powder, ½ tsp dry ginger powder and salt to taste. - mix and mash tamarind and dates.
  15. Furthermore, simmer the mixture for 2 minutes.later allow the mixture to cool completly.
  16. Now transfer the dates, tamarind mixture to the mixer and blend smooth puree. - further strain the puree.
  17. And transfer the prepared khajoor imli ka chutney into airtight jar and store it in the refrigerator..
  18. Finally, use the prepared tamarind date chutney in preparing sev puri, bhel puri or pani puri.
