- Get 400 grams aar(aiyer)fish cut into pieces of 100 gram each

- Make ready 2 slit green chillies
- Prepare 2 medium sized raw mango
- Make ready 1/2 cup mustard oil
- Make ready 2 teaspoons sugar
- Take 2 teaspoons cumin powder
- Get 2 teaspoons garlic paste
- Make ready 1 teaspoon ginger paste
- Make ready 1 teaspoon turmeric powder
- Take 2 teaspoons chopped coriander leaves
- Take 3/4 cup water
- Prepare to taste Salt
Steps to make Aam Aar(Aiyer):
- Peel the skin and roughly chopped the green mangoes into small pieces.Make a fine paste of it and keep aside.
- Marinate the fish pieces with salt and turmeric powder.Keep it for 5 minutes.
- Heat mustard oil in a kadhai,fry the fish pieces in a low flame.
- When done keep them in a vessel and set aside.
- Add turmeric powder,ginger and garlic paste in the same oil and stir well.Cook for 2 minutes.
- Now add green chilli paste and raw mango paste in it.Mix well.
- Now add cumin powder in it and cook for 5 minutes or till the masala starts leaving oil.
- Add slit green chilli,sugar,salt and 3/4 cup water in it.Bring it to a boil.
- Now add the fried fish pieces into the gravy and simmer for 4-5 minutes.
- When the gravy became thick sprinkle chopped coriander leaves and switch off the flame.
- Garnish with slitted green chillies and more coriander leaves.
- Aam Aar (Aiyer)is ready to serve.
